JAPAN GYOKURO ASAHI

A Japanese rarity which roughly translates as "jewel dew". About two weeks before the harvest the tea bushes are covered with bamboo mats. The "shadow tea" develops less tannin, has a distinctly higher caffeine content and the leaves are a very dark green and slightly shiny.

In Japan Gyokuro is served especially to guests of honour. It has an elegant, subtle, yet strong flavour with a touch of sweetness.

Ingredients: green tea*.

Net Weight: 60 g.

I brewed this at 50°C for two minutes and the liquor came out a deep, cloudy green with an almost buttery texture on the tongue. That bamboo mat shading really does something to the tannins, since there’s barely any bitterness even after a second steep.

The umami depth here is remarkable, way deeper than any sencha I've tried—the shading clearly does something special. Brewed it at a cooler temperature and got this sweet, almost brothy finish that lasted through three infusions. A bit pricey for 60 grams, but for that "jewel dew" quality, it's wort

The bamboo mat shading really comes through in the cup—this gyokuro pours a deep, jewel-green brew with a sweet, almost brothy umami that’s nothing like regular sencha. I’ve been brewing it at 50°C for two minutes and the softness is incredible.
